MEAT! MEAT! MEAT!
I used to LOVE going to our the family dinner!! I could not wait to savor the different flavors of the many different foods, that only make an appearance on special occasions. It was euphoric, hams, turkeys, greens, cheesy potatoes, cakes, pies and cookies; I was truly a kid in a candy store, but now I dread it. The food is still good, no great, but after giving up meat, there is not much left for me to eat. I never realized how dependent we are, as a culture, on meat. The dressing has chicken stock, the greens are seasoned with smoked turkey, the cheesy potatoes are made with cream of chicken soup.........UGGGGGHHHHH!!!!!!! Everyone knows that I don't eat meat now, and they go out of their way to accommodate me, by making a green salad. That is supposed to fill me up, while the rest of them gorge themselves on this meat laden buffet.

I am Hungry!!!!
ok, I am trying to find recipes that are familiar and that I can turn into vegetarian recipes. So far I have succeeded with the easy stuff; lasagna, spaghetti, enchiladas (several versions), taco salad, paella, and other easy stuff along those lines, but I have found that other people are not so willing to do the little things.....like simply using vegetable broth instead of chicken broth. I wonder why Americans are so unwilling to put down the meat?????

Becoming Vegetarian
I found that the most difficult thing about becoming a vegetarian is the lack of "transition" food. All the books and magazines all start with the introduction of new foods and concepts that are foreign to the average person. Tofu, quinoa, bean sprouts, millet and farina, were all new to me. If the words are new to me, the food itself is new to me. What exactly is a quinoa and what do I do with it? I found myself in a world I knew nothing about, I thought being a vegetarian meant that I was going to skip the meat and just eat the starch and the vegetables on my plate.....HA!! I found myself searching for something that I could identify with, and unless my research over the last year has been sorely misguided, it is not out there. There is not a cookbook that has the recipes that I was searching for, but not only that, the recipes that I needed.
